100% Cacao, Dark Chocolate Bar

The less sugar we add, the fewer places for the chocolate maker to hide. Our 100% cacao chocolate bar is an amazing representation of our craft because it is so pure and so clean. In order for this to work we need to have the perfect roast for the perfect cocoa bean. It took us 15 years to create a 100% chocolate that we loved enough to put our name on it. I am not sure when we will have another like it so get it while you can! 

This chocolate has such a lovely melt that explodes with a shocking burst of flavor building with an intensity that approaches challenging but peaks just short of combustion. The convergence of sweet, sour and astringent doesn't collide but melds in a celebration of harmonious flavor. Just when you think it is going to be too much, the exciting cacophonic eruption bursts like a forth of July flower bomb on your tongue, then drifts across your pallet leaving an etherial wake of toasty, chocolatey, mesmery.  As you come to, you find yourself reaching for another little taste. It is quite an exciting ride.
