I was looking through my isles of files and came across these two videos we made in the earliest days of our chocolate making history. We started in our house learning from any source we could find. I took a course at UC Davis about chocolate making, we learned online through Ecole Chocolat (http://www.ecolechocolat.com) but most importantly, we experimented nonstop. Once we committed ourselves to making chocolate, we were all in. We have not stopped making chocolate since we roasted our first bean about 5 years ago.
